Vegan Movie Snack Cookies

Ingredients

  • 1 flax egg See instructions below.
  • ½ cup coconut sugar
  • ¼ cup coconut oil firm, but scoop able
  • ¼ cup maple syrup
  • ½ teaspoon vanilla
  • 1 ¼ cup white whole wheat flour
  • ¼ teaspoon baking soda
  • ⅛- ¼ teaspoon salt, depending on how salty the popcorn is.
  • 1 cup chocolate covered raisins link to recipe below
  • 2 cup prepared popcorn

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside. 
  • Prepare flax egg by whisking together one tablespoon ground flax seeds and 2 tablespoon water and set aside. 
  • Whisk together flour, baking soda, and salt in a separate bowl. 
  • In a bowl incorporate sugar, oil, and maple syrup until fluffy using a hand mixer or stand mixer.
  • Add flax egg and vanilla and mix again. 
  • Add flour mix to oil and sugar mixture a little at a time until fully incorporated and soft dough forms. 
  • Fold in raisins and popcorn. 
  • Scoop cookies onto prepared baking sheet leaving 1-2 inches between each and press down lightly on each with your hand. 
  • Bake for 11-12 minutes or until edges and bottoms are lightly browned. Center will still be a little soft. Allow to cool before enjoying!

Notes

  • Recipe for raisins here.
  • If you use microwavable popcorn with added salt use ⅛ teaspoon salt for the dough.
