Vegan Peach Baked Oatmeal

Ingredients

  • 3 cups old fashioned rolled oats
  • 2 tablespoon ground flax seed
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 ¾ cup non dairy milk I use almond. Be sure milk is warmed slightly to prevent oil from hardening.
  • ¼ cup coconut sugar
  • 3 tablespoon coconut oil, melted
  • 2 cup diced peaches + slices for decorating the top if desired about 5 small peaches
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees and lightly grease a baking dish. I use a 9 inch ceramic pie plate.
  • In a large bowl combine oats, flax seed, baking powder, cinnamon and salt.
  • In another bowl combine milk,sugar, oil and vanilla.
  • Pour wet ingredients into dry and stir to combine well.
  • Fold in diced peaches and transfer to baking dish. Arrange sliced peaches on top, if using.
  • Bake for 30-40 minutes depending on the size of your baking dish or until golden browned and dry in appearance.
  • Allow to cool briefly before serving.
