1heaping cupcup frozen fruit like strawberries, blueberries, etc.
2teaspooncoconut butter
¼teaspoonvanilla extract optional
2-4tablespoonrolled oatsGluten free if needed.
Sweetener of choice, if desired. I like maple syrup.
Instructions
Combine all ingredients in blender.
Blend until smooth and creamy.
Garnish with additional oats or shredded coconut, optional.
Notes
Lite coconut milk or almond milk can be substituted it just won't be as thick and creamy. For the coconut butter I like Artisana brand or you can make it yourself. Just pour a bag of unsweetened full fat shredded coconut into a high powered blender or food processor. Blend on high scraping down the sides as needed until creamy, about 10 minutes.
