Fruit n' Cream Oat Smoothie

Ingredients

  • 1 cup full fat coconut milk
  • 1 heaping cup cup frozen fruit like strawberries, blueberries, etc.
  • 2 teaspoon coconut butter
  • ¼ teaspoon vanilla extract optional
  • 2-4 tablespoon rolled oats Gluten free if needed.
  • Sweetener of choice, if desired. I like maple syrup.

Instructions

  • Combine all ingredients in blender. 
  • Blend until smooth and creamy.
  • Garnish with additional oats or shredded coconut, optional. 

Notes

Lite coconut milk or almond milk can be substituted it just won't be as thick and creamy. For the coconut butter I like Artisana brand or you can make it yourself. Just pour a bag of unsweetened full fat shredded coconut into a high powered blender or food processor. Blend on high scraping down the sides as needed until creamy, about 10 minutes.
