2cupsold fashioned rolled oatsgluten free if needed

¼cup chocolate chips
Instructions
Soak pitted dates in hot water for 10 minutes to soften. Then drain the water.
Prepare an 8x8 making dish by lining with parchment or wax paper.
In a food processor combine dates, cacao, coconut butter, and peppermint extract until a paste forms.
Add oats, and chia seeds and pulse to incorporate. Mixture should be a bit crumbly, but hold together when press between your fingers.
Add chocolate chips and pulse a few more times.
Press mixture into baking dish being sure to press hard so the mixture holds together. I place a piece of wax paper no top and roll a can back and forth to help press mixture down evenly.
Refrigerate until set about 20 minutes.
Cut into desired size squares and enjoy!
Notes
If your mixture is not holding together add water 1 tbsp. at a time blending between each until it begins to hold together. Best stored in the refrigerator.
