Double Chocolate Mint Oat Squares

Ingredients

  • 1 cup medjool dates
  • ¼ cup cocoa powder
  • 2 tablespoon coconut butter
  • teaspoon peppermint extract
  • 2 cups old fashioned rolled oats gluten free if needed
  • 1 tablespoon chia seeds
  • ¼ cup chocolate chips

Instructions

  • Soak pitted dates in hot water for 10 minutes to soften. Then drain the water.
  • Prepare an 8x8 making dish by lining with parchment or wax paper.
  • In a food processor combine dates, cacao, coconut butter, and peppermint extract until a paste forms.
  • Add oats, and chia seeds and pulse to incorporate. Mixture should be a bit crumbly, but hold together when press between your fingers.
  • Add chocolate chips and pulse a few more times.
  • Press mixture into baking dish being sure to press hard so the mixture holds together. I place a piece of wax paper no top and roll a can back and forth to help press mixture down evenly.
  • Refrigerate until set about 20 minutes.
  • Cut into desired size squares and enjoy!

Notes

If your mixture is not holding together add water 1 tbsp. at a time blending between each until it begins to hold together. Best stored in the refrigerator.
