Peanut Butter Chocolate Chip Granola Bars

Peanut Butter Chocolate Chip Granola Bars that are soft, chewy and have a delicious peanut butter flavor.

Ingredients

  • 2 cups old fashioned oats gluten free if needed
  • ½ cup oat flour
  • ½ cup vegan mini chocolate chips
  • ¼ cup natural peanut butter, room temperature
  • ¼ cup brown rice syrup
  • ¼ cup coconut oil, melted

Instructions

  • Prepare a 7 X11glass baking dish by lining with parchment or wax paper. An 8 x 8 dish would also work. 
  • In a a large bowl combine oats, flour, and chocolate chips.
  • In another bowl combine peanut butter, brown rice syrup, and coconut oil. Stir to thoroughly combine. 
  • Add peanut butter mixture to oats and stir to combine, making sure all oats are coated. 
  • Pour mixture into lined dish and spread evenly. 
  • Press mixture down so it will hold together when removed from dish. I lay another piece of paper over the top and roll a small can while pressing down to do this. 
  • Refrigerate for 1 hour to firm up and set.
