Peanut Butter Chocolate Chip Granola Bars that are soft, chewy and have a delicious peanut butter flavor.

Ingredients
2cupsold fashioned oats gluten free if needed
½ cup oat flour
½cup vegan mini chocolate chips
¼ cup natural peanut butter, room temperature
¼cupbrown rice syrup
¼cupcoconut oil, melted
Instructions
Prepare a 7 X11glass baking dish by lining with parchment or wax paper. An 8 x 8 dish would also work.
In a a large bowl combine oats, flour, and chocolate chips.
In another bowl combine peanut butter, brown rice syrup, and coconut oil. Stir to thoroughly combine.
Add peanut butter mixture to oats and stir to combine, making sure all oats are coated.
Pour mixture into lined dish and spread evenly.
Press mixture down so it will hold together when removed from dish. I lay another piece of paper over the top and roll a small can while pressing down to do this.
