- ½ tablespoon oil olive, coconut & avocado work well
- 1-2 tablespoon maple syrup, depending on desired sweetness
- ½ teaspoon cinnamon
- pinch of sea salt
- 1 cup raw pumpkin seeds
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
Combine oil, syrup and cinnamon in a small bowl stirring to fully incorporate.
Pour over pumpkin seeds and stir to evenly coat.
Bake for 7 minutes, check and stir seeds around pan to promote even roasting.
Continue baking for 7-10 minutes or until seeds are lighlty golden.
Sprinkle with sea salt immediately after removing from oven.
Cool on baking sheet before transfering to an air tight container. Seeds may crackle and pop a bit as they cool.
