Black Bean Quinoa Burgers that are easy, healthy and packed with flavor. These simple burgers are made with no weird ingredients and no food processor. Plus, they are vegan and gluten free.

Ingredients
1tablespoonolive oil
½small onion, diced
½cupcorn, frozen or fresh removed from the cob
½cupdiced red bell pepper or jalapeño or other pepper
2garlic cloves, minced
2teaspoon ground chili powder
1teaspoon ground cumin
1teaspoon smoked paprika
¾cupquinoa
¼ teaspoonsalt + more to taste
⅛teaspoon black pepper
2 cupwater
1 ½ cupblack beans
Instructions
Heat olive oil in a sauté pan or deep skillet over medium heat. Add onion, bell pepper and corn. Sauté vegetables for 5-7 minutes until softened.
Add quinoa, garlic, chili powder, cumin, paprika, quinoa, salt and pepper. Toast for 1 minute. Add water and bring to a boil. Cover and reduce heat to a simmer.
Simmer for 25-30 minutes until all water has been absorbed. Stir. The quinoa should start to become sticky and hold together. If it does not return to heat and cook for a few minutes longer to ensure all water has been absorbed.
Mash half of the black beans and stir well into quinoa mixture. Add remaining whole beans and fold in. Taste and add more salt if needed.
Preheat oven to 400 degrees. Line a baking sheet with a silicone baking mat or parchment paper.
Let mixture cool enough to handle. Divide mixture into 8 portions and form patties. Keep fingers and palms moistened with water to prevent mixture from sticking to hands.
Place formed patties on prepared baking sheet.
Bake for about 20 minutes, flipping halfway through.
