Ingredients
Blueberry Cardamom Sauce
1cupblueberries fresh or frozen
1-2tablespoonmaple syrup or cane sugar
¼teaspoonground cardamom
Steel Cut Oatmeal
½cupsteel cut oats
½cupnon dairy milk
½cupwater
pinch of saltoptional
Date and Nut Crumble
2-3 dates
1tablespoonalmonds
1tablespoonwalnuts
1tablespoonpecans
Instructions
Blueberry Cardamom Sauce
In a small sauce pan stir together blueberries, syrup or sugar and cardamom.
Cook over medium heat, stirring occasionally until berries soften. Use the back of a spoon to burst the berries. Cook until berries have broken down and become jammy.
Steel Cut Oats
Combine all ingredients in a small saucepan. Bring to a boil. Reduce heat to low. Simmer stirring occasionally until oats have softened and liquid has absorbed. Quick cook steel cut oats will take about 10 minutes and traditional steel cut will take about 30 minutes .
Date and Nut Crumble
You can use a knife or food processor to rough chop the date and nuts together.
To assemble bowls
Scoop oats into bowls, top with blueberry sauce and a sprinkle of date and nut crumble. Serve immediately.
