Ingredients
1cupquinoa
2 ½cupwater
2tablespoonnutritional yeast
½ teaspoononion powder
½teaspoongarlic powder
½teaspoonsalt
¼tsp pepper
Instructions
Wash quinoa in a fine mesh strainer to remove any bitterness caused by the saponin coating that protects the seeds as the grow.
Combine quinoa, water, nutritional yeast, onion powder, garlic powder, salt and pepper in a medium saucepan. Bring to a boil, cover and reduce heat to a simmer.
Continue to simmer quinoa for 30 minutes without lifting the lid. All water should be absorbed.
Remove from heat and stir using a large wooden spoon. Mixture should become sticky and form a dough.
Allow to cool for 5-10 minutes until safe to handle.
Preheat oven to 450 degrees and lightly oil a baking sheet.
Take a small amount of mixture and roll and shape with hands to form tots. This mixture is very sticky so I find it helpful to have a dish of water to dip fingers into to keep dough from sticking to hands.
Place tots on baking sheet and bake for about 25 minutes or until browned and crispy outside. Serve with your favorite dipping sauce.
Notes
The tots may be frozen for later use. Do not bake. Instead place baking sheet in freezer for several hours. After tots are frozen transfer to an airtight storage container or sandwich bag. Make a large batch and have some handy anytime.
