No Bake Peanut Butter Oatmeal Balls

Ingredients

peanut butter
½
cup
medjool dates, about 10-12
½ - ¾
cup
old fashioned rolled oats
GF, if needed.
⅛
teaspoon
salt
¼
teaspoon
vanilla

tablespoon
water
Instructions
Soak dates in warm water for 10 minutes to soften.
Discard soak water.
Combine dates, peanut butter, salt, and vanilla in food processor until mixture is crumbly.
Add water starting with 1 tbsp. until mixture becomes a paste and holds together.
Add oats and pulse just to combine.
Take small amounts of mixture and roll in balls about 1 inch in size.
Store in refrigerator or freezer.
