If you love peanut butter then you will love these No Bake Peanut Butter Oatmeal Balls. They're quick, easy, healthy, and most importantly delicious.

Peanut Butter cookies are one of my all time favorite flavors of cookies. The creamy, chewy texture and peanut-y flavor, there's just something so right about it. I just don't always have the time to bake a fresh batch and ugh! wait for them to cool. That's where these No Bake Peanut Butter Oatmeal Balls come in.
These little guys have just 6 ingredients, no refined sugar, are gluten free(if you use gluten free oats), and take less than 20 minutes start to finish. Now that's my kind of cookie!
Ingredients
Dates are endlessly versatile and the secret to these delicious little treats. This naturally sweet, antioxidant rich fruit is perfect for sweetening these balls instead of sugar. Plus, there's the added bonus of fiber and nutrients like iron, potassium, and vitamin A. That means this cookie ball is good for you too.
Instructions
This recipe is so easy to make. Start by soaking the dates to make it easier to blend them. Then combine the dates, peanut butter, salt and vanilla in the bowl of the food processor. Once the mixture is broken down add the oats and pulse a few times to incorporate. Roll the mixture into desired size balls and refrigerate until ready to enjoy.
Equipment
You will need a food processor to make this recipe as well as measuring spoons.
Storage
Store oat balls in an airtight container in the refrigerator. Good for 1-2 weeks.
You can store the balls in the freezer for extended storage up to 2 months.

No Bake Peanut Butter Oatmeal Balls
Ingredients
- ½ cup peanut butter
- ½ cup medjool dates, about 10-12
- ½ - ¾ cup old fashioned rolled oats GF, if needed.
- ⅛ teaspoon salt
- ¼ teaspoon vanilla
- 1-2 tablespoon water
Instructions
- Soak dates in warm water for 10 minutes to soften. Discard soak water.
- Combine dates, peanut butter, salt, and vanilla in food processor until mixture is crumbly.
- Add water starting with 1 tbsp. until mixture becomes a paste and holds together.
- Add oats and pulse just to combine.
- Take small amounts of mixture and roll in balls about 1 inch in size.Store in refrigerator or freezer.
