These Smoky Red Lentil Crackers are a healthy, protein and fiber packed snack that satisfies. Simple to make with just 7 ingredients.

These Smoky Red Lentil Crackers are a new favorite around here. The ultra thin and crispy crackers are a great high protein, high fiber snack when you need a little something to tide you over. Even better, these crackers are super easy to make and budget friendly too. Enjoy them with your favorite dip or spread or eat them like chips!

Ingredients

These crackers are made with minimal ingredients. You may already have what you need on hand.

Substitutions & Variations

  • Spicy -add cayenne powder to give these crackers some heat
  • Oil - use a neutral oil such as avocado, vegetable, etc.
  • Smoked Paprika - use regular paprika or omit if desired.
  • Other flavors - use different spices such as Italian seasoning, chili powder, oregano, thyme, sesame seeds, za'atar, etc.

Instructions

There are just a few steps to make these crackers. Start with soaking the red lentils to soften before blending with remaining ingredients into a thick spreadable batter. Spread on a baking sheet and bake until crisp.

Sort and rinse lentils. Soak lentils in boiling water for 20 minutes. Drain lentils.

Transfer to a food processor, add all other ingredients. Blend until smooth.

Spread mixture very thinly on a lined baking sheet. Bake at 400 degrees for 10 minutes.

Use a pizza cutter to score crackers. Return to oven, bake 10-15 minutes more until crispy.

Top Tip

For the best results, spread the lentil mixture as thinly and evenly as possible. An offset spatula works well for this.

Equipment

You will need a food processor or blender, a silicone mat or parchment paper and 1-2 large baking sheets. An offset spatula is very helpful to spread the batter thin enough, but you can also use a rubber spatula.

Storage

Store crackers in an airtight container in the pantry. Good for up to a week.

Are red lentils good for you?

Yes, red lentils are high in protein and fiber as well as vitamin and minerals such as folate, iron, potassium and more.

Is there a downside to eating lentils?

You could experience digestive issues due to the high fiber content if eaten in large quantities.

Equipment

  • 1 food processor or blender
  • 1-2 large baking sheets

Ingredients
  

  • ½ cup dried red lentils
  • ¼ cup water + more for soaking
  • 1 tablespoon oil avocado, olive, vegetable, etc.
  • ¾ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon baking powder

Instructions
 

  • Sort and rinse lentils with cool water. Transfer lentils to a bowl and carefully pour boiling water over them. Soak lentils in boiling water for 20 minutes. Drain lentils.
    ½ cup dried red lentils
  • Preheat oven to 400 degrees. Line a large baking sheet with a silicone mat or parchment paper. Set aside.
  • Transfer lentils to the bowl of a food processor or blender, add ½ cup water, oil, salt, garlic powder, paprika and baking powder. Blend until smooth stopping to scrap down sides of bowl as needed.
    ¼ cup water + more for soaking , 1 tablespoon oil , ¾ teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon smoked paprika , ½ teaspoon baking powder
  • Spread lentil mixture very thinly and evenly on a lined baking sheet. An offset spatula works well for this. Bake for 10 minutes.
  • After 10 minutes of baking, remove pan from oven. Use a pizza cutter to score crackers. Return to oven, bake 10-15 minutes more until crispy.

Notes

This recipe can easily be doubled. You will need additional baking sheets.
