Instructions

A few simple steps is all it takes to bake up this crispy delicious snack.

Chickpeas with the skins removed on a blue cloth.

Preheat oven to 400 degrees. Drain, rinse, and dry the chickpeas with a towel removing and discarding any loose skins. Use canned chickpeas or dry beans that have been cooked ahead of time.

Transfer the chickpeas to a baking sheet and spread in even layer. Bake for 20 minutes until chickpeas begin to crisp. They will still be soft and a bit chewy in the center.

Partially Roasted chickpeas on a baking sheet.

Remove from oven and drizzle with olive oil and sprinkle with seasonings. Toss to coat evenly.

Fully baked Smoky Garlic Roasted Chickpeas on a baking sheet.

Lower heat to 375 degrees and return chickpeas to oven. Bake for 10-15 additional minutes until chickpeas are crispy throughout.

Hint: To remove the skins from chickpeas easily, place on a large kitchen towel or paper towels and gently rub the towel over the beans to loosen skins. Then pick the skins away and discard.

Substitutions

  • smoked paprika - you can use any variety of paprika you like - try hot paprika for a little heat.

Equipment

No special equipment is need for this recipe. A large sheet pan and access to an oven are all you need.

Storage

You can store the chickpeas in an air tight container, but they will lose some of the crispness over time.

Top tip

It’s best to enjoy these the same day you make them. After the first day they lose their crunch and become chewy. Still tasty, but not as good as fresh from the oven.
