These Spiced Pumpkin Butter Oats Bars are all about fall. From the warm, spicy flavor accented with pumpkin, right down to the orange color. Don’t you just love the color by the way!? I do and I love these bars. And if you are a pumpkin lover like me, then I think you will too.
I knew this 5 Minute Spiced Pumpkin Butter was destined to end up in at least a few other fall inspired recipes. After the success of these apple butter bars it seemed only natural to make a pumpkin version.
Ingredients
You'll only need 9 simple ingredients to make these pumpkin butter bars.
- flour
- oats
- pumpkin puree
- coconut oil or vegan butter
- sugar
- pumpkin pie spice
- baking powder
- salt

Instructions
These bars are super easy to make! The dough and crumb topping is made in just one bowl.
Preheat oven to 350 degrees and lightly grease an 8 x 8 baking dish. Combine flour, oats, sugar, pumpkin pie spice, salt, and baking powder. Cut in vegan butter or coconut oil until only pea size pieces remain. Add pumpkin puree and work in while maintaining a crumbly texture.
Press just over half the mixture into baking dish. Be sure to apply enough pressure that mixture holds together. You can place a piece of parchment paper on the top and roll a can back and forth to provide even pressure.
Spread spiced pumpkin butter over crust in an even layer.
Crumble remaining oat mixture over the pumpkin butter layer. Bake for 30-35 minutes or until lightly browned and crumble is toasted and a little crunchy. Allow to cool completely before cutting into desired sized squares or bars.

Substitutions
- Flour - all purpose, white whole wheat, whole wheat pastry and oat flour all work.
- Gluten Free - use or a 1:1 gluten free blend to make this gluten free
- Pumpkin Butter - apple butter can be used instead of pumpkin butter. See this apple version.
Variations
- Deluxe - add chopped walnuts or pecans to half of dough for the crumble topping for a bit of crunch.
If pumpkin isn't your thing, these apple butter oat bars are absolutely delicious.

Storage
Store in an air tight container in the fridge. Good for 2-3 days.
Top tip
Allow to cool completely before cutting to prevent the bars from crumbling.

Instructions
