Chocolate chia pudding topped with brownie crumble "dirt" with a marzipan bunny bottom digging in, these Easter Dirt Cups are so cute and perfect for celebrating!

Ingredients
Chia pudding
2 cupsnon dairy milk
½cupchia seeds
3tablespooncocoa powder
3-4 tbsp maple syrupdepending on desired sweetness
1 tablespoonvanilla
small pinch of salt
Brownie crumble dirt
10large dates
¾cupwalnut halve and pieces
¼cupcocoa powder
small pinch of salt
Marzipan
½cupalmond flour
1cuppowdered sugar
¼teaspoonalmond extract
1-2tbsp water
Instructions
Chia pudding
Combine non dairy milk, chia seeds, cocoa powder, maple syrup, vanilla and salt in a blender. Blend until smooth.
Transfer to a container and refrigerate for 1-2 hours until thickened.
Brownie crumble dirt
Add dates, walnuts, cocoa powder and salt to the bowl of food processor. Pulse to roughly chop until the mixture resembles dirt.
Set aside until ready to assemble.
Marzipan
Add almond flour, powdered sugar, almond extract and 1 tablespoon of water to the bowl of food processor. Process until a dough forms adding up to 1 tablespoon more of water if needed. Refrigerate to firm up before shaping bunnies.
To make bunnies- use marzipan to make a ball about ¾ -1 inch in diameter to be the base of the body. Make a smaller ball to be the tail. Make two oblong shaped pieces for the feet. Press the tail and feet to the larger ball creating a bunny. Optional: Add fruit powder to a portion of marzipan and kneed to mix to make pink. Use small pieces of pink marzipan to create the heel and toes of the bunny's foot.
Assemble
Spoon chia pudding into small bowls, sprinkle brownie crumble dirt over the top. Place bunny on the dirt to look like it is digging in.
