Easter Dirt Cups

Chocolate chia pudding topped with brownie crumble "dirt" and a marzipan bunny digging in, these Easter Dirt Cups are so cute and perfect for celebrating!

Easter is a few days away and I have one more last minute treat to share. These Easter Dirt Cups are really easy to put together with no cooking involved. Dirt cups have been around for a long time and consist of chocolate pudding and usually crushed cookies to resemble dirt along with gummy worms. Not vegan, but this version is and it's a bit healthier too. These cups are chia pudding topped with my favorite raw brownie crumble and the cutest marzipan bunny!

The brownie crumble "dirt" for these cups was originally created as a layer in this cake. It's so delicious, super easy to make and really resembles dirt.

Ingredients

You've probably heard of chia pudding, which is chia seeds combined with non dairy milk and flavorings of your choice. You can blend for a smooth texture as we prefer or leave the seeds whole for more texture. Dates and walnuts are the main components of the brownie crumble. The bunnies are marzipan rolled and shaped to make the tail and feet. You can make marzipan (recipe below) or use store bought.

Substitutions & Variations

  • instead of the brownie crumble you can use crushed sandwich cookies
  • add vegan jelly beans to look like easter eggs around the bunny

How to make Easter Dirt Cups

These dirt cups are super simple to whip up. Combine ingredients for pudding in a blender to make a smoother consistency or simple mix whole seeds for more texture. We prefer a smoother pudding, but it's really up to what you like.

Combine all ingredients for chia pudding in a blender until smooth. Cover and refrigerate for 1-2 hours.

Combine all ingredients for brownie crumble in the bowl of food processor. Pulse to break up to resemble dirt.

Assemble cups layering chia pudding then dirt and finally topping with bunny.

💡 Top Tips

Chill the chia pudding for 1-2 hours. Add the brownie crumble and marzipan bunny just before serving.

Equipment

For this recipe, a high speed blender is necessary if you want blended chia seed pudding. You can also just combine the whole seeds with the other ingredients if you like the texture that way.

Storage

It's best to store the components for the cups separately until ready to serve and then assembling. Leftover assembled cups can also be kept covered in the fridge however the marzipan may become a bit sticky. Good for 2-3 days.

Common Questions

What are the benefits of eating chia seeds?

Chia seeds are a good source of fiber, omega-3 fatty acids, antioxidants and minerals. They aid in digestion and support heart health.

Is it okay to eat chia seeds every day?

It is generally safe to eat chia seeds everyday in moderation. The high fiber content may cause digestive issues if you are not used to it so start with a small amount and increase gradually.

What is the downside of eating chia seeds?

Chia seeds have a high fiber content, which may cause bloating, gas, diarrhea or constipation if you are not accustomed to a high fiber diet.

Equipment

  • Food processor

Ingredients
  

Chia pudding

  • 2 cups non dairy milk
  • ½ cup chia seeds
  • 3 tablespoon cocoa powder
  • 3-4 tbsp maple syrup depending on desired sweetness
  • 1 tablespoon vanilla
  • small pinch of salt

Brownie crumble dirt

  • 10 large dates
  • ¾ cup walnut halve and pieces
  • ¼ cup cocoa powder
  • small pinch of salt

Marzipan

  • ½ cup almond flour
  • 1 cup powdered sugar
  • ¼ teaspoon almond extract
  • 1-2 tbsp water

Instructions
 

Chia pudding

  • Combine non dairy milk, chia seeds, cocoa powder, maple syrup, vanilla and salt in a blender. Blend until smooth.
  • Transfer to a container and refrigerate for 1-2 hours until thickened.

Brownie crumble dirt

  • Add dates, walnuts, cocoa powder and salt to the bowl of food processor. Pulse to roughly chop until the mixture resembles dirt.
  • Set aside until ready to assemble.

Marzipan

  • Add almond flour, powdered sugar, almond extract and 1 tablespoon of water to the bowl of food processor. Process until a dough forms adding up to 1 tablespoon more of water if needed. Refrigerate to firm up before shaping bunnies.
  • To make bunnies- use marzipan to make a ball about ¾ -1 inch in diameter to be the base of the body. Make a smaller ball to be the tail. Make two oblong shaped pieces for the feet. Press the tail and feet to the larger ball creating a bunny.
    Optional: Add fruit powder to a portion of marzipan and kneed to mix to make pink. Use small pieces of pink marzipan to create the heel and toes of the bunny's foot.

Assemble

  • Spoon chia pudding into small bowls, sprinkle brownie crumble dirt over the top. Place bunny on the dirt to look like it is digging in.
