These no bake Double Chocolate Mint Oat Squares make the perfect healthy snack everyone will love. Vegan, only 7 ingredients & ready in 25 minutes.

Double Chocolate Mint Oat Squares

Need a healthier snack that tastes great? Try these Double Chocolate Mint Oat Squares. They are super simple to make and perfect for those afternoon snack cravings we all seem to get. They taste a little like a Peppermint Patty and Mounds candy bar combined into one delicious bite. Yum!

Try these peanut butter chocolate chip granola bars for an equally satisfying snack that packs great in lunchboxes.

ingredients

So, what's in them? Only 7 whole food ingredients.

  • old fashioned rolled oats 
  • medjool dates
  • cocoa powder
  • chocolate chips 
  • coconut butter
  • chia seeds
  • peppermint extract

Double Chocolate Mint Oat Squares

To make them only takes about 5 minutes of active time and then about 20 minutes in the fridge to set.

Prepare an 8x8 making dish by lining with parchment or wax paper. Soak pitted dates in hot water for 10 minutes to soften. In a food processor combine dates, cacao, coconut butter, and peppermint extract until a paste forms. Add oats, and chia seeds and pulse to incorporate. Mixture should be a bit crumbly, but hold together when press between your fingers. Add chocolate chips and pulse a few more times.

Press mixture into baking dish being sure to press hard so the mixture holds together. I place a piece of wax paper no top and roll a can back and forth to help press mixture down evenly. Refrigerate until set about 20 minutes. Cut into squares and enjoy!

Store these bars in an air tight container in the refrigerator for up to a week. Freeze for longer storage.

Ingredients
  • 1 cup medjool dates
  • ¼ cup cocoa powder
  • 2 tablespoon coconut butter
  • ⅛ teaspoon peppermint extract
  • 2 cups old fashioned rolled oats gluten free if needed
  • 1 tablespoon chia seeds
  • ¼ cup chocolate chips
Instructions
  1. Soak pitted dates in hot water for 10 minutes to soften. Then drain the water.

  2. Prepare an 8x8 making dish by lining with parchment or wax paper.

  3. In a food processor combine dates, cacao, coconut butter, and peppermint extract until a paste forms.

  4. Add oats, and chia seeds and pulse to incorporate. Mixture should be a bit crumbly, but hold together when press between your fingers.

  5. Add chocolate chips and pulse a few more times.

  6. Press mixture into baking dish being sure to press hard so the mixture holds together. I place a piece of wax paper no top and roll a can back and forth to help press mixture down evenly.

  8. Cut into desired size squares and enjoy!

Recipe Notes

If your mixture is not holding together add water 1 tbsp. at a time blending between each until it begins to hold together. Best stored in the refrigerator.
