very ripe bananas

tablespoon
peanut butter

tablespoon
maple syrup

coconut oil, melted

flax eggs - 2 tablespoon ground flax seed + 4 tablespoon water

quinoa flakes or quick cook oats

non dairy chocolate chips or dried cranberries, etc.

chopped peanuts, pecan or almond slivers

Instructions
Preheat oven to 350 degrees. Lightly grease an 8x8 baking dish. cinnamon and salt. Stir to combine. Set aside.
In a bowl, mash bananas. Add peanut butter, maple syrup, coconut oil, flax eggs.
Add quinoa flakes or oats. Stir well to combine. Add chocolate chips or dried fruit is using at this point as well.
Transfer batter to baking pan. Spread in an even layer. Add chopped nuts, if using.
Place in oven and bake for 15-20 minutes until golden. Cool in the pan. Once cool, cut into 16 bars.
Store in an airtight container.
Notes
Combine ground flax seed and water in a small bowl. Set aside to thicken for about 5 minutes. For more information on flax seeds see this
