This Strawberry Banana Baked Oatmeal is super simple and can be baked ahead of time so you always have a healthy, satisfying breakfast ready. And it is vegan and gluten free.

Ingredients
2 tbsp chia seeds
1 ⅓ cup non dairy milk, slightly warmed
3cupsold fashioned oats Gluten free if needed.
2teaspoonbaking powder
1teaspooncinnamon
¼tsp salt
⅓ cup coconut sugar
3tablespooncoconut oil, melted
2tsp vanilla extract
1 banana, sliced
1cupstrawberries, sliced
Instructions
Preheat oven to 350 degrees and lightly oil a 7 x 11 baking dish. You could also use a 9 X 13 dish just reduce baking time a few minutes.
In a small bowl combine chia seeds and milk. Set aside for 3-4 minutes to thicken a bit.
In a large bowl combine oats, baking powder, cinnamon, salt, and coconut sugar.
Add coconut oil and vanilla to milk and stir to combine.
Pour wet ingredients over dry and combine.
Add bananas and strawberries and fold in to combine.
Transfer oat mixture to prepared baking dish and bake for 30 - 40 minutes.
