Instructions
Drain tofu and lightly squeeze the block to remove excess water. There is no need to press the tofu.
14 oz extra firm tofu
Break tofu in chunks and place in the bowl of food processor or blender.
Add nutritional yeast, 1 tablespoon of lemon juice and salt.
1 tablespoon nutritional yeast ,
1-2 tablespoon fresh lemon juice,
1 teaspoon salt
Blend, stopping to scrape sides of bowl as needed, until smooth and creamy. This will take 2-3 minutes.
Taste and adjust flavor to your liking by adding additional lemon juice, salt or nutritional yeast.
The cream cheese can be used right away or stored in an air tight container in the refrigerator.
