Ingredients
1 ½ cupnon dairy milk
1tablespoonapple cider vinegar
1tablespoonground flax seed
2tablespoonwater
1 ¼ cupcorn meal
1 cupall purpose flour
1teaspoonsalt
2tsp baking powder
½tsp baking soda
¼cupnon dairy butter or oil melted and cooled
3tablespooncane sugar
1cupnon dairy cheddar cheese optional
Instructions
Whisk non dairy milk and apple cider vinegar together. Set aside for 5 minutes to make vegan buttermilk.
Whisk together flax seed and water in another bowl to make a flax egg. Set aside to thicken.
In a large bowl combine cornmeal, flour, salt, baking powder and baking soda. Whisk thoroughly to incorporate .
Add flax egg, cooled butter and sugar to milk mixture and stir together.
Pour wet ingredients into cornmeal flour mixture. Stir just to combine. Fold in cheddar, if using. Let batter rest.
While batter rests, preheat waffle maker.
Once heated add batter to waffle maker according to waffle maker instructions. Continue to cook waffles until all batter has been used. The number of waffles you make will depend on the type of waffle maker you have.
