We're big fans of breakfast around here and especially love "breakfast for dinner". These Vegan Cornbread Waffles are great for morning or evening, sweet or savory. Try them with a smear of vegan butter and drizzle of maple syrup or with a bowl of hearty soup or chili.
Currently, we are enjoying these waffles topped with our barbecue lentils for a delicious, satisfying meal.

Ingredients
These waffles are made with many pantry staples you may already have on hand. Vegan cheese in these waffles is nice, but you can leave it out, if you prefer.

- corn meal
- all purpose flour
- salt
- baking powder
- baking soda
- sugar
- flax egg
- non dairy butter
- non dairy milk
- apple cider vinegar
- non dairy cheddar

Substitutions & Variations
- Gluten free - instead of all purpose flour, you can use a 1:1 gluten free flour
- Spicy - add chopped pickled jalapeños or a pinch of cayenne to the batter to add spiciness
- Deluxe - serve topped with our barbecue lentils or your favorite chili.
How to make Vegan Cornbread Waffles
Making these waffles is quite easy. Preparing the batter takes only a few minutes. Then cook a few minutes in a waffle maker. You can have them on the table in no time at all.

Combine corn meal, all purpose flour, salt, baking powder and baking soda in a bowl. Whisk well to thoroughly combine.

Combine non dairy milk, flax egg, oil/butter and sugar. Pour wet into dry ingredients and stir just to combine.

Add non dairy cheese, if using and fold in.

Scoop batter into waffle maker and cook according to manufacturer instructions.
Top Tip
Every waffle maker brand is different. Follow the manufacturer's instructions for cooking the waffles to achieve the best results. Also, wait for the waffle maker to be fully heated before adding any batter.

Storage
Store leftover waffles in an airtight container in the fridge. Good for 2-3 days.
To freeze: Place cooled waffles on a sheet pan and place in the freezer. Once frozen through transfer to a freezer safe container or bag.
To reheat: Use a toaster Heat oven to 350 degrees and heat
Common Questions
You can top waffles with traditional toppings such as butter and maple syrup or fresh fruit. Or try something different and add savory toppings such as chili or barbecue beans.

Vegan Cornbread Waffles
Equipment
- Waffle Maker
Ingredients
- 1 ½ cup non dairy milk
- 1 tablespoon apple cider vinegar
- 1 tablespoon ground flax seed
- 2 tablespoon water
- 1 ¼ cup corn meal
- 1 cup all purpose flour
- 1 teaspoon salt
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ cup non dairy butter or oil melted and cooled
- 3 tablespoon cane sugar
- 1 cup non dairy cheddar cheese optional
Instructions
- Whisk non dairy milk and apple cider vinegar together. Set aside for 5 minutes to make vegan buttermilk.
- Whisk together flax seed and water in another bowl to make a flax egg. Set aside to thicken.
- In a large bowl combine cornmeal, flour, salt, baking powder and baking soda. Whisk thoroughly to incorporate .
- Add flax egg, cooled butter and sugar to milk mixture and stir together.
- Pour wet ingredients into cornmeal flour mixture. Stir just to combine. Fold in cheddar, if using. Let batter rest.
- While batter rests, preheat waffle maker.
- Once heated add batter to waffle maker according to waffle maker instructions. Continue to cook waffles until all batter has been used. The number of waffles you make will depend on the type of waffle maker you have.
