Vegan Peach Baked Oatmeal

Ingredients

old fashioned rolled oats

ground flax seed

baking powder

cinnamon

1 ¾
cup
non dairy milk
I use almond. Be sure milk is warmed slightly to prevent oil from hardening.

cup
coconut sugar
3
tablespoon
coconut oil, melted
2
cup
diced peaches + slices for decorating the top if desired
about 5 small peaches
1
tsp
vanilla extract
Instructions
Preheat oven to 350 degrees and lightly grease a baking dish. I use a 9 inch ceramic pie plate.
In a large bowl combine oats, flax seed, baking powder, cinnamon and salt.
In another bowl combine milk,sugar, oil and vanilla.
Pour wet ingredients into dry and stir to combine well.
Fold in diced peaches and transfer to baking dish. Arrange sliced peaches on top, if using.
Bake for 30-40 minutes depending on the size of your baking dish or until golden browned and dry in appearance.
Allow to cool briefly before serving.
