Before summer is over and the peaches are gone, I had to get out at least one recipe featuring one of our most favorite fruits. This Vegan Peach Baked Oatmeal is a perfect way to use a lot of peaches and have a nutritious breakfast any day of the week because it can be made ahead and warmed when needed.
The kids are back in school now so having hearty breakfasts packed with as much nutrition as possible is necessary to keep them full and ready to learn until lunchtime. Baked oatmeals are one of our favorite ways to do this. Super versatile and simple, and the best part is you can bake a pan and eat for a few days. No fuss, easy meals like this make the morning go so much more smoothly. My kids are old enough to serve themselves so they grab a bowl, warm it up and dig in all of their own!
This is also a great recipe if you find yourself with an abundance of peaches to use or peaches that are maybe not at the peak of flavor. I found myself in this situation with a load of peaches that didn't have the best flavor. By adding cinnamon, a bit of sugar and baking, those bland peaches were suddenly anything but. Just look at that yumminess!

Vegan Peach Baked Oatmeal
Ingredients
- 3 cups old fashioned rolled oats
- 2 tablespoon ground flax seed
- 2 teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 ¾ cup non dairy milk I use almond. Be sure milk is warmed slightly to prevent oil from hardening.
- ¼ cup coconut sugar
- 3 tablespoon coconut oil, melted
- 2 cup diced peaches + slices for decorating the top if desired about 5 small peaches
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees and lightly grease a baking dish. I use a 9 inch ceramic pie plate.
- In a large bowl combine oats, flax seed, baking powder, cinnamon and salt.
- In another bowl combine milk,sugar, oil and vanilla.
- Pour wet ingredients into dry and stir to combine well.
- Fold in diced peaches and transfer to baking dish. Arrange sliced peaches on top, if using.
- Bake for 30-40 minutes depending on the size of your baking dish or until golden browned and dry in appearance.
- Allow to cool briefly before serving.
