1bunch fresh spinach
1garlic clove, minced
1tbsp olive oil
2cups cooked white beans such as great northern or cannellini
¼cupnutritional yeast
3 tbsp olive oil
2tablespoonvegan mayo such as Vegenaise
1tablespoonlemon juice
¾ - 1teaspoonsalt
¼ teaspoonpepper
crackers, toasted bread, veggies, etc. for dipping
Instructions
Wash spinach thoroughly and chop.
Heat 1 tbsp. olive oil over medium heat and sauté spinach until wilted. Add garlic, cook for 30 seconds longer. Salt and pepper lightly.
In a food processor combine beans, nutritional yeast, 3 tablespoon olive oil, vegan mayo, lemon juice, salt and pepper to taste. Process until beans have broken down completely and mixture is creamy.
