When I made this Vegan Eggnog a couple of weeks ago I knew it was destined to end up in a cookie. These Vegan Eggnog Spice Cookies are so yummy and perfect for the holidays. They have that wonderful spice flavor and are sweet without being overly sweet.
I tried this recipe with a few variations. One batch was made with white whole wheat flour and the other was made with all purpose. Both work well depending on your preference. I try to stay away from white flour since it lacks any real nutritional value and I also prefer the texture and flavor of the wheat version.
I also tested a batch leaving out the eggnog and just using the spices to get the flavor. While this version wasn’t bad, it just wasn’t as good as the one with so I strongly recommend not omitting the eggnog. The glaze is not necessary, but really enhances the overall cookie experience.
You will definitely want to add these Eggnog Spice Cookies to your holiday goodies. Go ahead and bake up a batch, you won’t be disappointed.

Vegan Eggnog Spice Cookies
Ingredients
- 1 ½ cup white whole wheat flour or all purpose
- ½ cup Earth Balance or other vegan butter
- ½ cup cane sugar
- ¼ cup Vegan Eggnog or vanilla almond milk
- ½ teaspoon vanilla
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¼ teaspoon ground nutmeg
- ¼ teaspoon groung cinnamon
Glaze
- ½ cup powdered sugar
- 4 teaspoon vegan eggnog
- ¼ teaspoon ground nutmeg
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper, set aside.
- In a stand mixer or a hand mixer cream butter and sugar until fluffy and incorporated.
- Add flour, baking soda, salt, nutmeg, cinnamon, vanilla, and eggnog. Mix until combined.
- Roll dough into balls about 1 inch in size. Place on baking sheet and press with palm of hand to form cookie shape.
- Bake for 10-12 minutes.
- Allow to cool on pan for 5 minutes before moving to a wire rack to cool fully. While the cookies cool prepare glaze if using.
Glaze
- In a small bowl combine powdered sugar, nutmeg, and eggnog. Mix well until smooth.
- Drizzle or spread glaze over cookies and allow to sit until glaze firms up.
