If pumpkin spice isn't your thing try the ginger lemon tea for another warm and cozy drink for cold days.
ingredients
Just a few simple ingredients including real pumpkin and warming spices like ginger, cinnamon, nutmeg, and cloves plus a touch of maple syrup for sweetness.
instructions
To make a cup, start with your favorite nondairy milk (I used almond) and whisk everything, except the vanilla together and warm in a small pot on the stove. It's that simple!
In a small saucepan combine milk, pumpkin, pie spice, maple syrup, and salt if using and whisk to thoroughly combine.
Heat over medium low heat until just simmering, about 4-5 minutes. Stir often to prevent milk from scorching.
Add vanilla and stir to combine. Remove from heat and carefully pour into mug.
Sprinkle with cinnamon or top with vegan whip cream, if desired. Serve immediately.
Hint: This recipe can easily be doubled or tripled as needed.
substitutions
- Milk - use any non dairy milk you like.
- Pumpkin pie spice - cinnamon can be used instead of pumpkin pie spice.
- Maple syrup - cane sugar can be used instead of maple syrup.
