The perfect treat for movie nights this summer, these Vegan Movie Snack Cookies are soft and loaded with chocolate covered raisins and popcorn.
Oh, summertime! Slowing down, playing outside and watching movies together are a few of our favorite things to do this time of year. But you can't have movie nights without snacks and I did promise you a super fun recipe using those chocolate covered raisins in my last post so here it is, Vegan Movie Snack Cookies. A soft, tender cookie studded with plenty of chocolate covered raisins and freshly popped popcorn. These cookies are the perfect treat for movie nights with the family!
The idea for these cookies actually came from a Family Fun magazine from a few years ago. Sorry, I can't recall the exact issue. Of course, that version was not vegan and even though I knew I could easily make it vegan, for some reason I just never got around to it. Until now that is and you guys they are so good and fun! Why did I wait so long to make these!?
Ingredients
I started with my usual cookie dough base that I use for so many of our favorite cookies and then folded in the homemade chocolate covered raisins and freshly popped popcorn. I use an air popper to make the popcorn with no added butter/oil or salt and instead increased the salt in the dough a little bit more than I'd usually add. Everything comes together with just the right amount of sweet and saltiness. And since these cookies are made with whole wheat and have no refined sugar, they're healthier than most so eating more than one is totally acceptable and advised.

- coconut sugar
- coconut oil
- maple syrup
- vanilla
- white whole wheat flour
- baking soda
- salt
- vegan chocolate covered raisins
- prepared popcorn

Instructions
Preheat oven to 350 degrees and line a baking sheet with parchment paper, set aside. In a small bowl, prepare flax egg by whisking together 1 tablespoon ground flax seeds and 2 tablespoon water and set aside. Whisk together flour, baking soda, and salt in a separate bowl, set aside.
Cream together sugar, oil, and maple syrup until fluffy using a hand mixer or stand mixer. Add the flax egg and vanilla and mix again. Add flour mix to oil and sugar mixture a little at a time until fully incorporated and soft dough forms. Fold in raisins and popcorn.
Here's the dough, doesn't it look good enough to eat as is? Of course, it's probably best to bake the dough rather than just stick your face in the bowl.
Scoop cookies onto prepared baking sheet leaving 1-2 inches between each and press down lightly on each with your hand.
Bake for 11-12 minutes or until edges and bottoms are lightly browned. The center will still be a little soft. Allow to cool before enjoying!
Substitutions
- Chocolate Covered Raisins - Instead of the chocolate raisins you can use chocolate chips or another chocolate candy.
- White Whole Wheat Flour - Instead of wheat flour you can use all purpose or a gluten free 1:1 all purpose.

A stand mixer of hand mixer is needed to make the dough.
Storage
These cookies are best eaten within a day or two of baking since the popcorn tends to get a bit stale any longer than that. Store in an air tight container at room temperature.

- ¼ cup coconut oil firm, but scoop able
- ¼ cup maple syrup
- ½ teaspoon vanilla
- 1 ¼ cup white whole wheat flour
- ¼ teaspoon baking soda
- ⅛- ¼ teaspoon salt, depending on how salty the popcorn is.

- If you use microwavable popcorn with added salt use ⅛ teaspoon salt for the dough.
