Celebrate Independence Day with these super fun Vegan Red, White and Blue Popsicles! Naturally colored and no refined sugar.

These Red, White, and Blue Popsicles are super fun and perfect for celebrating this July 4th. My kiddos immediately loved the look of these pops and once they tasted them they loved them even more. I really like that we know exactly what's in them and what's not because they are homemade. There's no artificial color or flavors and no refined sugar.

These popsicles may look difficult, but they're actually really simple to make and only require 4 ingredients.

instructions

These kind of popsicle usually have clean defined layers of colors, which involves waiting for one color to freeze before adding the next. I don't have that kind of time so rather than waiting for each color layer to freeze before adding the next, I pour the colors in resulting in this kind of tie dyed look. We love the look, but if you want the clean striped look and have the time, pour one color and allow to freeze before pouring the next until all colors have been added.

substitutions & variations

  • Fruit - You can use raspberries instead of strawberries if you prefer
  • Coconut milk - You can use soy milk or another non dairy milk instead of coconut milk, if needed. The result will be less creamy and a bit more icy.
  • Sweetner - you can use agave, another liquid sweetener or stevia drops instead of maple syrup.

equipment

You will needed a blender to make these popsicles as well as popsicle molds. If you don't have molds you can use paper cups and food grade wooden sticks instead.

storage

Store popsicles in the freezer until ready to serve.

Vegan Red, White, & Blue Popsicles

Equipment

  • blender

Ingredients
  

Red:

  • 1 cup fresh strawberries
  • 3 tablespoon coconut milk, canned full fat or lite
  • 1 tablespoon maple syrup

White:

  • 1 ¼ cup coconut milk, canned full fat or lite
  • 2 tablespoon maple syrup

Blue:

  • ¾ cup fresh blueberries
  • ¼ cup coconut milk, canned full fat or lite
  • 1 tablespoon maple syrup

Instructions
 

Red:

  • Blend strawberries, coconut milk, and maple syrup until smooth. 
  • Divide mixture between popsicles molds. Rinse out blender and set aside.

White:

  • In a measuring cup or small bowl, stir together coconut milk and maple syrup. 
  • Pour coconut milk into molds on top of the red. The colors will mix a little. 

Blue:

  • Blend blueberries, coconut milk, and maple syrup until smooth. 
  • Pour into molds on top of the white filling the molds.
  • Insert sticks and place in the freezer for 4-6 hours. 
  • To easily remove, place mold under warm running water for a minute or two. The mold will slide off.
