Cherry Chocolate Chip Brownies

These Cherry Chocolate Chip Brownies are fudg-y, decadent and so delicious! Plus, they're made with simple every day ingredients so they're super easy to make. Vegan with gluten free option.

If you love brownies as much as I do this is another delicious recipe to try.

ingredients

The ingredients needed for these brownies are straight forward. Nothing weird, just basic stuff you may already have in the pantry.

  • flour
  • cocoa powder
  • sugar
  • baking powder
  • salt
  • oil
  • apple sauce
  • non dairy milk
  • vanilla
  • cherries, fresh or frozen
  • chocolate chips

Preheat the oven to 350 degrees and lightly grease an 8x8 baking dish. In a large bowl thoroughly combine flour, cocoa powder, sugar, baking powder and salt. In another bowl, whisk together oil, applesauce, non dairy milk and vanilla. Pour the wet ingredients into the dry ingredients and mix just to combine. Add cherries and chocolate chips and gently fold in using a rubber spatula. Spread batter evenly in prepared baking dish and bake for 25-30 minutes. Insert a toothpick to check for doneness. If the toothpick comes out clean the brownies are done. Allow to cool completely and refrigerate for a couple of hours before cutting.

equipment

No special equipment is needed. Only an 8x8 baking dish and basic kitchen tools like mixing bowls and measuring cups are needed.

storage

Store brownies in an air tight container for 3-4 days. Refrigerate to extend freshness up to 1 week.

Ingredients
  

  • 1 cup flour I used whole wheat pastry flour
  • ½ cup cocoa powder
  • ½ cup sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup coconut oil
  • ½ cup apple sauce room temperature
  • ¼ cup unsweetened almond milk room temperature
  • ½ teaspoon vanilla
  • 2 cups sweet cherries fresh or frozen(thawed) roughly chopped
  • ¼ cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees and oil or line with parchment paper an 8x8 pan.
  • In a large bowl throughly combine flour, cocoa powder, sugar, baking powder, and salt.
  • In a small bowl combine coconut oil, apple sauce, vanilla, and almond milk. Add wet ingredients to dry and stir just to combine.
  •  Add cherries and chocolate chips and gently fold into the batter.
  • Spread batter evenly in prepared pan and bake for 25-30 minutes or until toothpick inserted comes out clean. Do not over bake or the brownies will not fudgy.
  • Allow to cool completely and then refrigerate for a couple of hours before cutting.
