Creamy and delicious, this Easy Vegan Edamame Hummus is made with just 8 ingredients and no oil.
Summer break is wrapping up for us and the kids will be heading back to school in less than a week! Where did the time go?! It definitely doesn't feel like it should be over yet, time just flew by. Since we'll be back to packing lunches I've been thinking up new ideas to keep things exciting. Hummus is always a favorite here and having a variety of flavors keeps it from getting boring. The latest flavor we've been enjoying is this Easy Vegan Edamame Hummus and it's delicious.
To Make the Hummus
This recipe is super simple requiring just a handful of ingredients and a food processor. We like to use a combination of chickpeas and edamame for a couple of reasons. The creamy texture they add and the water they come packed in. The water, called aquafaba, makes a creamy dip without the need for any oil.
Where to find edamame?
You can get ready to eat shelled edamame at many grocery stores in the produce section or you can find it in the freezer section. Simply cook according to package directions and it's good to go for making the hummus.
Spread this lovely pale green hummus on pita wedges, wraps, toast or dip fresh veggies and enjoy! All my kiddos really liked this hummus, even the picky one, that is until she saw the edamame on top for the photos. She won't eat beans of any kind at the moment so once she saw that it was a no go. Of course, we tried to explain that the dip would still taste the same as before, but there was no reasoning with her. Oh well, nothing to do, but wait for this phase to pass 😕

Easy Vegan Edamame Hummus
Ingredients
- 15 oz can chickpeas drain reserving water
- 1 ½ cup shelled edamame
- ¼ - ½ cup reserved chickpea water
- 1 garlic clove
- 2 tbsp tahini
- 2-3 tablespoon lemon juice, fresh squeezed
- ½ tsp salt or to taste
- dash of pepper
Instructions
- In a food processor combine all ingredeints starting with ¼ cup of chickpea water. Blend, scraping down sides as needed.
- Add more water as needed to reach desired consistency. Taste and adjust seasonings to your liking.
- Serve with pita and chopped vegetables.
- Store any leftovers in a container in the fridge.
